Things I Love Thursdays: Basic Comfort Stroller Rain Cover

Ok, I'll tell you a story if you promise not to tell anyone that I'm a horrible parent!
 
A few weeks ago my husband and I ventured out on a walk with our daughter and three dogs. The forecast said it was going to rain all day, but hadn't by the time evening rolled around, so we thought we'd be ok. We put our handy dandy rain cover over the stroller in case it started raining. Well, by the time we were a block from our home it started sprinking. Just as we entered the park we heard a clap of thunder and then the rain started pouring! I felt like we were in the middle of a monsoon! It was raining so hard that our dogs were cowering under the bushes! We quickly turned around and came back home. I can only imagine how crazy the people driving by in their cars must have thought we were! We toweled off our dogs and had to ring out our clothing. We were soaked to the bone! Our daughter did not have a single drop of water on her thanks to the rain cover!

Mid-Week Munchies: Homemade Baby Food Recipes



Sorry I'm a day late with this week's Mid-Week Munchies! I've been pretty busy lately! Anyways, for this week's Mid-Week Munchies, I decided to give you a sampling of a couple recipes from the book Top 100 Baby Purees by Annabel Karmel.

Sweet Potato with Spinach and Peas (6-7 months)
  • 1 tablespoon unsalted butter
  • 1/2 cup washed and sliced white part of a leek
  • 1 large sweet potato (12 ounces), peeled and chopped
  • 1/2 cup peas
  • 3/4 cup fresh baby spinach (3 ounces), washed and tough stems removed
Melt the buter in a saucepan and saute the leek for 2 to 3 minutes or until softened, then add the sweet potato. Pour in 1 cup water, bring to a boil, then cover and simmer for 7 to 8 minutes. Add the peas and spinach and cook for 3 minutes. Puree the begetables in a blender to make a smooth consistency for your baby, adding a little of the cooking liquid if necessary.

Tomato, Cauliflower, and Carrot with Basil (7-9 months)
  • 2 medium carrots, peeled and sliced
  • 1 cup chopped cauliflower florets
  • 2 tablespoons unsalted butter
  • 2 medium tomatos (8 ounces), peeled, seeded, and roughly chopped
  • 2 or 3 basil leaves
  • 1/2 cup grated cheddar cheese
Put the carrots in a small saucepan, cover with boiling water, and simmer, covered, for 10 minutes. Add the cauliflower and cook, covered, for 7 to 8 minutes, adding extra water if necessary. Meanwhile, melt the butter in another pan, add the tomatoes, and saute until mushy. Remove from the heat and stir in the basil and cheese until melted. Puree the carrots and cauliflower with the tomato sauce and about 3 tablespoons of the cooking liquid.
