
Yum yum yum for fruity fruit fruit! I just started my baby girl on fruit a couple weeks ago and she is loving it! So far I've given her pears, apples and bananas. Her favorite is probably bananas. I've also been making the bananas chunkier than anything she has had so far. I never would have thought giving my baby mashed up food could bring so much joy! :)
Well today I thought I'd share a couple fruity recipes from the book Naturally Healthy First Foods for Baby by Jacqueline Rubin.
Apricot-Mango Tango
1 cup washed organic dried apricots
2 cups natural apple juice or baby apple juice
1 cup mango washed, peeled, cored, and diced
Boil juice, apricots, and mango in a saucepan.
Cover and simmer for about 10 minutes.
Mash or puree with some cooking liquid. Leave some chunks for older babies.
Baby Fruit Compote
1/4 cup dried apricots, washed and chopped
1/3 cup dried pitted prunes, chopped
2 apples, washed, peeled, cored, and diced
1 ripe pear, washed, peeled, cored, and diced
1 tablespoon of baby apple juice or water
Place all ingredients in a small saucepan and add 1 tablespoon of water or baby apple juice.
Boil, cover, and simmer for 20-25 minutes, stirring occasionally. If juices run low, add a little water.
Puree.
Blueberry-Peach-Mango
1/4 cup fresh blueberries, washed
1 small peach, washed, peeled, and diced
1/4 cup mango, washed, peeled, and diced
Boil 2-3 tablespoons of water in a saucepan, add peach and mango, cover and simmer for 5 minutes.
Add blueberries and simmer for 4-5 minutes until soft.
Puree all fruits.
If desired, thicken with a little baby rice cereal.
